KEITH SPRAGG - PARTNER
keith grew up in the valley and traveled around the US managing successful restaurants for the last 25 years. bennigans, outback steakhouse and roy's hawaiian fusion cuisine are some of the restaurants that make up his experience. his last project was helping his friend grow his restaurant on a sunny beach in florida. keith has a wide range of experience in running both kitchens and front of house operations. keith is excited to be back in his hometown, where his family still resides, and creating a restaurant that spokane valley really needs.
DARRIN SANDER - PARTNER
darrin grew up in texas and worked for the hard rock cafe for 10 years working in six different states over the years. once he landed in san francisco, he discovered a new passion for restaurants with that areas passionate drive for excellence, local produce and great design. in the bay area he ran roy's hawaiian fusion, and several other award winning restaurants; sushi ran, village sake and evangeline in napa.
STEVE JENSEN - CHEF
born and raised in lewiston, idaho, steve grew up with a deep love of nature, wrought in the craggy hills of hell's canyon on the snake river and in the lakes and timber forests of northern washington. steve's professional experience started with culinary school at le cordon bleu in las vegas where he graduated at the top of his class and continued with cooking at the Venetian and at picasso in the bellagio under renowned chef julian seranno. after 5 years in the desert his love of the mountains and forests of his youth drew him closer to home. over the years steve has developed his own unique style combining his humble rural beginnings with classic techniques and influences from around the globe. some of his local places he's worked are bistro on spruce, ambrosia, luna and waddell's
